This seafood company takes it’s name from Youghal Bay, pronounced Yawl, in Cork, where the sea washes up onto the generous beach here. David Browne’s father Jim Browne started the business in 1987 from a small cottage across the road from this, the third and very modern premises the company now occupies.
The recipe from Yawl Bay Smoked Salmon, smoked by David on site here, is the same one Jim devised. Today the fish are sourced from farms in Irish waters off the west coast. Smoke is obtained from oak sawdust. Whole sides of Salmon are kiln smoked for anything from eight hours up, and the finished result is moist, succulent flesh infused with a gentle oaky flavour. Sides of Yawl Bay Smoked Salmon come handsomely wrapped on gold foil in vacuum packs, and if you want to take one home, you can have it boxed for traveling. Smaller packs of sliced smoked salmon and half sides are also available.
But these days, there is much more to Yawl Bay Seafood than just the salmon smoking facility. Out at the front of the building, a lovely fresh fish shop is in operation. It’s out of town, but has the benefit of plenty of parking so you can buy in bulk and drive it all home. David is very particular about where he sources his fresh fish, and often makes the drive to Union Hall in West Cork to buy from the fresh fish auction there.
On the fresh fish counter he stocks a mix of cod, haddock, sole, monkfish, halibut, oysters and mussels and whatever else is good on the day. Fish are filleted and packed on a display of crushed ice for freshness. The shop also has a deep freeze cabinet with prepared shellfish dishes and seafood chowder and paella mixes, big prawns and scallops and a few other bits and pieces. A chill cabinet stocks proper Italian egg pastas, unusual olive oils, vinegars and dressings, pickled garlic, jarred vegetables and other items. In the smokehouse, alongside the salmon, David also smokes some haddock, halibut and tuna when he can get it, and monkfish for special orders. The haddock is undyed so has none of the bright yellow colour normally associated with this smoked fish. And his halibut is firm and meaty, and can be eaten as it comes, no cooking required.
Whether you are visiting Cork, passing through, or lucky enough to be living nearby, come here if you want really good, really fresh fish and delicious smoked fish. David Browne and his fish are putting the town of Youghal firmly on Ireland’s culinary map.
